Pumpkin Spice Bread

What would Fall be without the warm, spicy aroma of pumpkin bread cooking in the oven? Boring, that’s what! So, to keep Fall from being boring, I did a little baking over the weekend – Pumpkin Spice Bread – to be exact.

This is my go-to recipe when I’m craving the organic, spicy, sweet flavors of the season.  It bakes up nicely, with a crusty outside and a soft, moist inside. It’s great as-is, or for more intensity, add chocolate chips, pecans, or walnuts.

Ingredients
  1. 1 ½ cup white sugar
  2. 1/2 cup brown sugar
  3. 1 cup vegetable oil
  4. 4 eggs, lightly beaten
  5. 1 can (15 ounces) solid-pack pumpkin
  6. 3 ½ cups all-purpose flour
  7. 1 teaspoon baking soda
  8. 1 teaspoon ground cinnamon
  9. 1 teaspoon ground nutmeg
  10. ½ teaspoon salt
  11. ½ teaspoon baking powder
  12. ½ teaspoon ground cloves
  13. ½ teaspoon ground allspice
  14. ½ cup water
Instructions
  1. Preheat oven to 350 degrees F. Butter and flour two 9x5 inch loaf pans. In a large bowl, combine sugar, oil and eggs. Add pumpkin and mix well. Into another large bowl, sift flour, cloves, cinnamon, nutmeg, baking soda, and baking powder. Stir in pumpkin mixture alternately with water, beating well after each addition. Mix in chocolate chips or nuts, if desired.
  2. Divide batter equally between prepared pans. Bake 60 – 65 minutes or until toothpick inserted into center comes out clean. Cool in pans 10 minutes before removing to a wire rack to cool completely.
